The trick to good chicken salad is (plot twist) tasty chicken. I use a mix of leftover white and dark meat from when I cook a whole chicken. If you do not have leftover chicken, grill or bake bone in split chicken breast with rotisserie chicken seasoning. Hellmanns mayo is best.

    Steps for Completion
  1. Cut up your leftover chicken (or split bone in chicken breast cooked with Rotisserie Chicken Seasoning) into small pieces and add to the mixing bowl.
  2. Cut up celery into small pieces and add to the chicken.
  3. Add mayo and mix. Make sure not to overmix or it will become mush.
  4. Taste it. The seasoning that was on the cooked chicken may be enough. If not, add whatever flavor it is missing from the list of seasonings.
